Healthy Peanut Butter Chocolate Eggs with Matcha
Ingredients
- 1/2 cup creamy peanut Butter Unsweetened, No Additional Oils
- 1/3 cup blanched almond flour more as needed
- 2 tbsp maple syrup
- 1 1/2 tbsp ceremonial grade matcha powder adjust to taste
- 1 tsp vanilla bean paste
- pinch fine salt
- 2/3 cup dairy-free chocolate chips
- flaky salt for garnish
Instructions

Prepare the matcha peanut butter mixture. Mix the maple syrup, vanilla bean paste and salt in a small bowl. Use a spatula to blend until smooth.

Mix in the almond flour. Stir until you have a dough that is workable. Continue adding almond flour until the dough is smooth and elastic enough to roll out a small amount of dough with your hands. Once you have rolled a few tablespoons, form an egg shape using your hands. You can refrigerate the mixture for up to 10 minutes and then freeze it.

Place the chocolate chips in a microwave-safe bowl. Microwave for 15 seconds, stirring between.

Use a fork to form each egg-shaped filling. Dip in chocolate and then transfer to a baking sheet. Sprinkle a little flaky salt on top to finish.
